PUMPKIN PANCAKES

i have a crazy obsession with fall... pumpkins.

i blame it on growing up and living in texas to move this year to pennsylvania.

we have been oh, so spoiled..
with cooler weather, wonderful fall smells and PUMPKINS!

here is a recipe that i adapted and put my own spin on... because you know i can't follow directions! 

seriously...

the recipe SUCKS!

kate's adapted recipe:
pumpkin pancakes
Ingredients
1 cup flour (its what i had on hand)
1/4 cup ground flax meal
1 tablespoon of coconut sugar (again, what i had in the cupboard)
2 teaspoons baking powder
1/2 teaspoon cinnamon
1 tablespoon pumpkin pie spice (or more if your like me and like it REALLY pumkiny!)
1 cup goat's milk (or whatever milk you have in the fridge)
6 tablespoons fresh pumpkin puree (or canned... yet again i used what i had!)
2 tablespoons sawflower oil (im sure any oil, other than olive, would work just as well)
1 egg

  1. In a large bowl whisk together all the dry ingredients.
  1. In a separate bowl, stir together milk, pumpkin puree, oil, and egg.
  1. Fold wet mixture into dry ingredients.
  1. Oil a skillet over medium heat; pour in 1/4 cup batter for each pancake. Cook pancakes about 3 minutes per side; serve with toasted pecans and maple yogurt.



makes about 8-10 pancakes
